Veggie Quesadillas

A quesadilla is a Mexican dish, consisting of a tortilla that is filled with cheese, and sometimes meats, beans, and vegetables and then cooked on a griddle or in a frying pan.

 

You will need:

  • Frying pan
  • Tortilla wraps
  • Cheese such as cheddar
  • Vegetables of your choice for the filling

This is a great way to use up vegetables that are not looking their best such as leeks, peppers, carrot, spring onions and mushrooms.

For 6 people you will need approx. 500g of mixed vegetable and a similar amount of hard cheese such as cheddar.

Layer the vegetable filling and cheese onto a tortilla wrap and top with another to form a sandwich.

Heat a large frying pan until hot and then turn down to its lowest heat.

Put the sandwich into the frying pan and cook for approx. 2 minutes until golden and then turn over and repeat.

Once cooked, cut into 8 and enjoy. (We recommend you wait a couple of minutes before eating as the cheese will be really hot.)

You can try lots of different fillings to see which one you like the best.
